Apple Mascarpone Cake is full of rich sweet apple flavor and has the perfect density and a light cinnamon flavor throughout. The flavor of mascarpone cake is very good, it's totally different from cream cheese taste like I think before. With the apples and cinnamon on the top make the cake more delicious. I totally fall in love with this Italian cake. And the good thing is really quick and easy to make this cake.

  • 18 cm or 7 inch round baking pan

Ingredients
  

  • 4 Eggs room temperature
  • 150 grams (2/3 cup) Caster sugar
  • 250 grams (2/3 cup) Mascarpone cheese
  • 200 grams (1 1/2 cup) All purpose flour
  • 1 1/2 tsp Baking powder
  • 2 Apples
  • Caster Sugar for sprinkle
  • Cinnamon powder for sprinkle

Instructions
 

  • Preheat oven to 180 degrees C or 350 degrees F, line your baking pan with baking paper
  • In a medium bowl, mix together all purpose flour and baking powder with spatula and set aside.
  • In another bowl, add the eggs and beat with a standing or hand mixer with low speed until light and foamy.
  • Add the sugar and beat again until mix incorporated. Then add the mascarpone cheese and beat again until well combined.
  • Slowly pour half of the flour mixture into the eggs mixture and beat until well combined. Add the rest of the flour and beat until there are no more flour streaks.
  • Cut the apples in slices but don't too thinly, and set aside.
  • Mix the cinnamon powder and caster sugar, and set aside.
  • Pour the batter into 18 cm or 7 inch baking pan and arrange the apples on the top of the batter.
  • Sprinkle the apples with the cinnamon mixture and bake for 60 until 70 minutes (depends on your oven). Check using toothpick inserted in the middle of the cake, if comes out clean means your cake already done.
  • Let cool the cake on the cooling rack and after the cake is completely cool, close the top with plastic cling wrap and store in the fridge for over night.
  • The next day, you can serve and enjoy the cake.
