WHITE CHOCOLATE CRANBERRY COOKIES

WHAT YOU NEED FOR MAKING THESE WHITE CHOCOLATE CRANBERRY COOKIES

For dry Ingredients : all purpose flour and baking soda

For wet Ingredients : butter (I use salted butter), light brown sugar, caster sugar, egg, vanilla extract, white chocolate chips and dried cranberries.

HOW TO MAKE WHITE CHOCOLATE CRANBERRY COOKIES

For dry Ingredients : In a medium bowl, add in flour and baking soda. Mix well and set aside.

For wet Ingredients : In another medium bowl, add in butter, caster sugar and brown sugar. Beat about 2 minutes until well combined.

Add in the egg and vanilla extract. Beat again until well combined.

Add in the flour mixture and mix well with spatula.

Add in white chocolate chips. Mix until just combined.

Add in dried cranberries and mix until just combined.

Scoop 1 tbsp of the dough and make a small ball, transfer onto the prepared baking sheet.

Press little bit with the back of the spoon (read the note)

Sprinkle with white chocolate chips and dried cranberries on the top.

Bake for 10-15 minutes (depends on your oven)

  • 250 grams (1 1/2 cups+1 tbsp) all purpose flour
  • 1/2 tsp baking soda
  • 113 grams (1/2 cup) salted butter room temperature
  • 110 grams (1/2 cup) light brown sugar
  • 55 gram (1/4 cup) caster sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 120 grams (3/4 cup) white chocolate chips
  • 97 grams (3/4 cup) dried cranberries
  • white chocolate chips for topping
  • dried cranberries for topping

Instructions
 

  • Preheat your oven 180 degrees C or 350 degrees F and line your baking sheet with baking paper.
  • For dry Ingredients : In a medium bowl, add in flour and baking soda. Mix well and set aside.
  • For wet Ingredients : In another medium bowl, add in butter, caster sugar and brown sugar. Beat about 2 minutes until well combined. Add in the egg and vanilla extract. Beat again until well combined.
  • Add in the flour mixture and mix well with spatula.
  • Add in white chocolate chips. Mix until just combined. Add in dried cranberries and mix again until just combined.
  • Scoop 1 tbsp of the dough and make a small ball, transfer onto the prepared baking sheet. Press little bit with the back of the spoon (read the note)
  • Sprinkle with white chocolate chips and dried cranberries on the top. Bake for 10-15 minutes (depends on your oven)
  • Transfer the cookies on the cooling rack and let them cool first.
  • After completely cool, enjoy!!

Note : If you don't want your cookies spread too much, you don't have to press your dough before you bake.
