STRAWBERRY JAM CRUMB CAKE

This Strawberry Jam Crumb Cake is a cake with sweet strawberry jam and cottage cheese, sprinkled with a crumble topping. Perfect dessert for any occasions like Christmas, coffee time or afternoon tea time, family gathering etc.

This cake is delicious, easy and quick to make. You can use other jam like blueberry, raspberry etc. All can work with this recipe.

WHAT YOU NEED FOR THIS CAKE :

For the cake base we need :

FlourĀ  : I use all purpose flour

Butter : You have to use cold butter and I use salted butter. If you use unsalted butter, please add a pinch of salt.

Sugar : I use caster sugar. You can use granulated sugar also

Baking powder : it will help the cake rise in the oven.

For filling, we need :

Cottage cheese, eggs and sugar

HOW TO MAKE STRAWBERRY JAM CRUMBLE CAKE :

Make the base cake :

In a medium bowl, you add flour and grate the butter into the flour.

Add in the sugar and baking powder. Mix well with your hand until you get crumble form. And set aside.

Make the filling :

Mix together the cottage cheese, eggs and sugar. Mix until well combined

Pour 3/4 of crumble batter into 22 cm or 8 inch spring form. Press the bottom with the bottom of a glass or with a spoon. Press the batter until the side of the spring form.

Pour the strawberry jam into the spring form and spread evenly.

Add in the cheese mixture on the top of strawberry jam.

Sprinkle with remain of the batter for the topping.

Bake for 45 until 50 minutes.

Ingredients
  

  • 360 grams (2 7/8 cups) All purpose flour
  • 180 grams (3/4 cup) Salted butter cold butter
  • 100 gram (1/2 cup) Caster sugar
  • 1/2 tsp Baking powder
  • 500 grams (2 cups) Cottage cheese
  • 2 Large eggs
  • 100 gram (1/2 cup) Caster sugar
  • 180 grams (0.56 cup) Strawberry jam

Instructions
 

  • Preheat your oven 180 degrees C or 350 degrees F and line your spring form with baking paper
  • Make the base cake :
    In a medium bowl, you add flour and grate the butter into the flour.
  • Add in the sugar and baking powder. Mix well with your hand until you get crumble form. And set aside.
  • Make the filling :
    Mix together the cottage cheese, eggs and sugar. Mix until well combined
  • Pour 3/4 of crumble batter into 22 cm or 8 inch spring form. Press the bottom with the bottom of a glass or with a spoon. Press the batter until the side of the spring form.
  • Pour the strawberry jam into the spring form and spread evenly.
  • Add in the cheese mixture on the top of strawberry jam.
  • Sprinkle with remain of the batter for the topping.
  • Bake the cake for 45 until 50 minutes.
  • Let it cool the cake on the cooling rack. After the cake completely cool, cover with plastic cling wrap and keep in the fridge for overnight.
  • The next day, cut the cake and enjoy!

Note :
Because there is cheese inside, so usually the taste of the cake will be better if you keep overnight in the fridge and eat the next day.
Store the rest of the cake in the airtight container and keep in the fridge.
