MASCARPONE CAKE WITH CHOCOLATE CHIPS

You know when I made this cake and tasted it, I just immediately said “OH, this is my new favorite cake and I have to add this to my regular weekend dessert rotation” And I did that, I already made this three times and always love this fluffy and moist Mascarpone Cake with Chocolate chips. The taste was always incredible and perfect for your breakfast, afternoon tea time, snack or dessert cake in any occasions.

This cake is super easy to make and if you don’t have bundt pan, you can use 22 cm round baking pan also. Mascarpone is basically like Italian cream cheese, but maybe a little creamier and sweeter. It doesn’t have the same little sour bite as cream cheese, but it’s super smooth and rich. I actually made this cake for the first time a couple months ago…and the cake was gone so fast, and I decided made it again.

For dry Ingredients : all purpose flour, baking powder, cornstarch and salt.

For wet Ingredients : Mascarpone cheese, eggs, vanilla extract, canola oil, fresh milk, caster sugar and chocolate chips.

Ingredients
  

  • 300 grams (2 1/2 cups) All purpose flour
  • 50 gram (1/2 cup) Cornstarch
  • 3 Large eggs room temperature
  • 150 grams (3/4 cup) Caster sugar you can use granulated sugar also
  • 200 grams (3/4 cup) Mascarpone cheese
  • 200 grams (3/4 cup) Fresh milk room temperature
  • 2 tsp Baking powder
  • 70 gram (1/4 cup) Canola oil
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 100 gram (3/4 cup) Chocolate chips

Instructions
 

  • Preheat oven 175 degrees C or 340 degrees F, Prepare your 22cm or 9x3 inches silicone bundt pan. If you use another bundt pan, grease and flour well your bundt pan.
  • In a medium bowl, mix well flour, cornstarch, baking powder and salt, set aside.
  • In another medium bowl, Mix eggs and sugar. Beat until pale and creamy, add mascarpone and beat again until well combined.
  • Add in vanilla extract, milk and canola oil, beat until well combined.
  • Pour 1/2 flour mixture into wet ingredients and mix well with spatula. Pour the rest of the flour mixture and mix well again.
  • Add in chocolate chips and mix with spatula. (don't over mix)
  • Pour the batter into the prepared bundt pan and release the air bubbles. Bake for 40-50 minutes or until toothpick comes out clean and dry.
    Let's completely cool, remove the cake from the bundt pan, slices and enjoy!!!
