FRUIT WHOLE WHEAT BREAD

 This Fruit Whole Wheat Bread recipe use a low calorie sweetener, so it’s healthy for you because you will get the sweetness from the dried fruits. Homemade bread is always the best and it will not enough to eat a slice only for your tasty breakfast or afternoon snack.

WHAT YOU NEED FOR MAKING FRUIT WHOLE WHEAT BREAD

All purpose flour, whole wheat flour, salt, dried apricots, dried cranberries, raisins.

Fresh milk, warm water, erythritol sugar, active dry yeast, salted butter

HOW TO MAKE FRUIT WHOLE WHEAT BREAD

Prepare the dough : In a big bowl, add in all purpose flour, whole wheat flour, salt, dried apricots, dried cranberries, raisins. Mix well and set aside.

Proof the yeast : In a glass measure, add sugar, warm milk, warm water and active dry yeast. Mix well and let it rest for 5 minutes until foaming and bubbly.

Mix the Ingredients : Add in the yeast mixture into the flour mixture. Mix well until you get the dough form. Cover with kitchen towel and let it rest for 10 minutes.

Knead the dough : After 10 minutes, add in the butter. Mix well, transfer the dough on the silicone mat and knead with your hand until smooth and elastic.

Make the dough into a ball, add about 1 tbsp oil (I use Olive oil) into the bowl and transfer the dough into the bowl, drizzle the dough with oil. Cover the bowl with kitchen towel and let it rest for 1 hour.

After 1 hour, open the kitchen towel. Punch the dough to remove air bubbles. Fold and roll the dough, then pinch to seal the open space. Transfer the dough into 25x12x7 cm or 9x5x3 inch prepared loaf pan. Cover with kitchen towel and let it rest for 30 minutes.

After 30 minutes, open the kitchen towel. Brush the dough with 1 beaten egg on the top. Bake the dough for 25-35 minutes (depends on your oven)

Ingredients
  

  • 250 grams (1 1/2 cups + 1 tbsp) all purpose flour
  • 250 grams (1 3/4 cups) whole wheat flour
  • 1/2 tsp salt
  • 60 grams (1/4 cup) dried apricots
  • 60 grams (1/2 cup) raisins
  • 60 grams (1/2 cup) dried cranberries
  • 1 tbsp erythritol (low calorie sweetener)
  • 250 ml (1 cup) warm milk
  • 90 ml (1/2 cup) warm water
  • 7 gram (2 1/4 tsp) active dry yeast
  • 60 gram (1/4 cup) butter
  • 1 egg beaten, for brushing the dough

Instructions
 

  • Prepare the dough : In a big bowl, add in all purpose flour, whole wheat flour, salt, dried apricots, dried cranberries, raisins. Mix well and set aside.
  • Proof the yeast : In a glass measure, add sugar, warm milk, warm water and active dry yeast. Mix well and let it rest for 5 minutes until foaming and bubbly.

  • While you wait for proofing, line your 25x12x7 cm or 9x5x3 inch loaf pan with baking paper.
  • After 1 hour, open the kitchen towel. Punch the dough to remove air bubbles. Fold and roll the dough, then pinch to seal the open space. Transfer the dough into 25x12x7 cm or 9x5x3 inch prepared loaf pan. Cover with kitchen towel and let it rest for 30 minutes.
  • Preheat your oven 180 degrees C or 350 degrees F.
  • After 30 minutes, open the kitchen towel. Brush the dough with 1 beaten egg on the top. Bake the dough for 25-35 minutes (depends on your oven)

  • After baking, let the bread cool on the cooling rack. After completely cool, cut in slices and enjoy!!

Notes

Note :
The top of the fruit bread will start browning at around 20-25 minutes of baking. It doesn't mean your dry fruit bread is done. If we take out, the center of the fruit yeast bread will have a doughy texture and it will smell yeast. so wait until the fruit bread is baked properly.
If you find the top is getting too dark, you can tent the top with an aluminum foil at around 20-25 minutes and then continue baking.
