CRANBERRY ORANGE BREAD

Cranberry Orange Bread made with dried cranberries, walnuts and a sweet orange fruits is one of my favorite sweet bread. It would be great if you can make your bread or dessert at home during your lock down or pandemic. This time I use dried cranberries because it’s really difficult to find fresh cranberries in my country where I live. If you can find it, you have to pay very expensive to buy fresh cranberries.

I love to eat sweet bread especially if made with fruits like banana bread, blueberry banana bread, lemon blueberry bread etc. Those are the breads which I usually eat for my breakfast. Fresh made makes the taste better.

During this pandemic, I always make bread, cake, and food by myself. And sometimes I also share my sweet breads and cakes with my neighbors. It’s fun for me to make my own dessert at home because I love to bake and like to try to make new recipe.

The cranberry and orange are perfect combination for this bread, It’s completely delicious! You will like this sweet bread.

HOW TO MAKE CRANBERRY ORANGE BREAD :

For the dry Ingredients : You need all purpose flour, baking soda, baking powder and salt. In medium bowl, mix together all purpose flour, baking soda, baking and salt with the whisk and set aside.

For the wet Ingredients : I divided the wet ingredients into two parts. In this first part, you need granulated sugar, orange zest, canola oil, egg and vanilla extract. In another bowl, add sugar, lemon zest and canola oil and beat with low speed.

Add the egg and beat again until mix incorporated.

And add vanilla extract and beat until well combined.

For the second part, you need orange juice and fresh milk. Slowly pour half of the flour mixture into the wet ingredients and beat until well combined. When you see the ingredients dry, add the orange juice and beat until well combined.

Pour the rest of the flour mixture and beat until there are no more flour streaks.

Then add the fresh milk and beat again until mix incorporated.

Fold in cranberries and walnuts : fold them into the batter and mix with spatula just until combined.

For this bread, I use mini loaf pan. If you don’t have mini loaf pan, you can use 12x25x7 cm or 9×5 inches loaf pan. Pour the batter into the mini loaf pan. and bake for 20 until 25 minutes. (for other loaf pan, bake for 35 until 45 minutes).

Ingredients
  

  • 270 grams (2 cups) All purpose flour
  • 1/2 tsp Baking soda
  • 1 tsp Baking powder
  • 1/2 tsp salt
  • 150 grams (3/4 cup) Granulated sugar
  • 130 grams (1 cup) Dried cranberries
  • 1 tbsp Orange zest
  • 1 Egg room temperature
  • 180 ml (3/4 cup) Orange juice from 2 Oranges
  • 125 ml (1/2 cup) Fresh milk room temperature
  • 75 ml (1/3 cup) Canola oil can use vegetable oil
  • 115 grams (1 cup) Chopped walnuts can use almonds or pecans
  • 1 tsp Vanilla extract

Instructions
 

  • Preheat oven to 175 degrees C or 350 degrees F, grease with oil your mini loaf pan or line your loaf pan with baking paper
  • In medium bowl, mix together all purpose flour, baking soda, baking and salt with the whisk and set aside.
  • In another bowl, add sugar, lemon zest and canola oil and beat with low speed.
  • Add the egg and beat again until mix incorporated.
  • And add vanilla extract and beat until well combined.
  • Slowly pour half of the flour mixture into the wet ingredients and beat until well combined.
  • When you see the ingredients dry, add the orange juice and beat until well combined.
  • Pour the rest of the flour mixture and beat until there are no more flour streaks.
  • Then add the fresh milk and beat again until mix incorporated.
  • Fold in cranberries and walnuts into the batter and mix with spatula just until combined.
  • Pour the batter into the mini loaf pan or 12x25x7 cm or 9x5 inches loaf pan.
  • Bake for 20 until 25 minutes for mini loaf pan like I use (for other loaf pan, bake for 35 until 45 minutes). Check using toothpick inserted in the middle of the bread, if comes out clean means your bread already done.
  • Let cool the bread on the cooling rack and removing the bread after it's completely cool. You can serve and enjoy the bread
