COFFEE BISCUIT ROLL CAKE

This Coffee Biscuit Roll Cake recipe is a big on flavor and an easy-to-make dessert. Drizzled with a unique mascarpone cheese mixture that will tantalize taste buds with every bite. I couldn’t stop eating this dessert.

This is the first time I made coffee cake, cause I have a problem if I drink coffee so actually I never think that I will make the cake with coffee. But when I know some cake recipes with coffee are delicious, so I decided to make one of them. And I really fall in love with this cake and the taste. The taste of the coffee was getting stronger after I kept the cake in the fridge for overnight. This cake has amazing taste, truly heaven!!

WHAT YOU NEED FOR MAKING THIS CAKE :

You only need digestive biscuits, fresh milk, melted butter and nescafe gold coffee. They are for making the roll cake.

WHAT YOU NEED FOR FILLING :

Nutella, mascarpone cheese, sugar and desiccated coconut.

HOW TO MAKE THIS COFFEE BISCUITS ROLL CAKE :

Make the roll cake : crush the biscuits with food processor until smooth.

In a medium bowl, pour milk, melted butter and coffee. Mix well.

Pour the butter mixture into the biscuits, mix until well combined.

Knead the biscuit dough until you get a texture that you can roll the dough later (watch on my video).

Roll out and flatten the dough on the baking paper. (I use 40×60 cm baking paper), cut the edge of the dough so you can get similar size from up to down.

Take out the edge of the dough and put in the middle, then roll out until flat.

Make the filling : In a medium bowl, add mascarpone cheese and sugar, mix well.

Then add desiccated coconut and mix until well combined. Set aside

Add Nutella on the dough and spread evenly.

Then add the cheese mixture on top of Nutella and spread evenly.

Slowly roll the cake and wrap with the baking paper. Keep in the fridge for 1 hour.

After 1 hour, open the baking paper and cut the edge of the cake on the both side.

Sprinkle with powdered sugar or you can use melted chocolate also for decorating the cake.

  • 400 grams (14.1 oz) Digestive biscuits
  • 80 gram (1/3 cup) Melted butter
  • 200 ml (1 cup) Fresh milk
  • 30 gram (3 tbsp) Nescafe gold coffee
  • 250 gram (2.5 cup) Mascarpone cheese
  • 80 gram (3/8 cups) Caster Sugar
  • 50 gram (1 cup) Desiccated coconut
  • 5 tbsp Nutella
