CHOCOLATE ALMOND CAKE

This Chocolate Almond Cake is a moist flourless chocolate cake enriched with almond flour that bring a wonderful flavor and texture. It’s a delicious gluten free dessert and healthy cause I use Erythritol sugar as a low calorie sweetener. Perfect for your Christmas and Holiday treats.

If you are a chocolate lovers and addict with chocolate, you must try this cake. I make it gluten free and healthy. I use dark chocolate also that make this chocolate cake wasn’t too sweet. I love this chocolate cake very much. This Chocolate Almond Cake only needs 5 Ingredients and easy to make.

WHAT YOU NEED FOR MAKING THIS CHOCOLATE ALMOND CAKE

Almond flour, eggs, Erythritol sugar, butter (I use salted butter), and dark chocolate.

HOW TO MAKE THIS CHOCOLATE ALMOND CAKE

Melt chocolate and butter with microwave or over a bain-marie until smooth. Let it cool and set aside.

In a medium bowl, mix egg yolks and 100 grams (1/2 cup) sugar, beat until thick and pale yellow colored.

Add in the melting chocolate and beat until well combined.

Add in almond flour and mix well with spatula.

In another medium bowl, beat egg whites until foamy with a high speed. Gradually add 50 grams (1/4 cup) sugar. Beat until stiff peaks form. Gently fold in the egg whites into the chocolate mixture. Mix until well combined.

Pour the batter into 20 cm prepared baking pan (I use silicone baking pan) and bake for 45-60 minutes (depends on your oven)

Let it cool completely on the cooling rack

Ingredients
  

  • 200 grams (2 cups) almond flour
  • 200 grams (7 oz) dark chocolate cut into small pieces
  • 150 grams 2/3 cup) salted butter
  • 150 grams (3/4 cup) erythritol sugar divided
  • 4 eggs

Instructions
 

  • Grease and line with baking paper 20 cm (8 inch) springform pan or use silicone baking pan. Preheat oven 180 degrees C or 350 degrees F
  • Melt chocolate and butter with microwave or over a bain-marie until smooth. Let it cool and set aside.
  • In a medium bowl, mix egg yolks and 100 grams (1/2 cup) sugar, beat until thick and pale yellow colored.
  • Add in the melting chocolate and beat until well combined.
  • Add in almond flour and mix well with spatula.
  • In another medium bowl, beat egg whites until foamy with a high speed. Gradually add 50 grams (1/4 cup) sugar. Beat until stiff peaks form. Gently fold in the egg whites into the chocolate mixture. Mix until well combined.
  • Pour the batter into 20 cm prepared baking pan (I use silicone baking pan) and bake for 45-60 minutes (depends on your oven)
  • Let it cool completely on the cooling rack. After completely cool, dust with powdered sugar and make decoration with strawberries and chocolate chunks. Slices and enjoy!
