Beef Udon / Niku Udon (Homemade Japanese Food)


This is one of my family favorite noodle soup. And when a rainy day, I love to make and eat soup than anything else. And this noodle is perfect for our dinner. This is from original Japanese recipe but it was make it simple to make. If you ask me about the taste, I will say it’s super delicious.

The key of this food is a broth which full of flavor and you will not feel bored drinking it. When the first time I made this, I was surprised with the result and the taste. And the most important was the whole family love this food.


These are the Ingredients for marinate : Sukiyaki beef, mirin, sugar, grated ginger and soy sauce.

Why we use Sukiyaki beef? because with thinly sliced beef seasoned make your udon soup more delicious. For this udon, you better use sukiyaki beef like you eat in the restaurant.

Mirin is a Japanese sweet rice wine. It is a type of rice wine similar to sake, but is lower alcohol content and higher sugar content. {wikipedia}. If you’re not allowed to drink alcohol, you can substitute mirin with Apple Cider Vinegar. The taste will not be the same but will still  delicious.

Soy sauce, ginger and sugar, those combinations will make the dish more flavor and tasty. So if all those ingredients mix with the beef, can you imagine what will the dish taste, right?

For the Onion, I mixed the onion with salt before I used that. It will give the soup more flavor. If you like that kind of soy sauce, salt and sugar flavor, you will like this dish.

For this dish, I also add Shiitake mushrooms but only to give strong flavor taste for the soup. I take out the Shiitake before I add the Udon.

Make this dish for your family, I guarantee you, they will like this dish. Buy ready udon in supermarket like I did. It will not take until one hour to  make this dish. Easy, fast and taste so good, that’s the important part.

Easy and delicious Niku Udon or beef udon noodle soup that made from original Japanese recipe. The flavor of the soup is the best.

  • 400 grams Sukiyaki beef
  • 1-1/2 tbsp Soy Sauce
  • 1-1/2 tbsp Mirin
  • 1 tsp Sugar
  • 1 tsp Grated ginger
  • 1/2 Big Onion
  • 1 tsp Salt
  • 1 tsp Sesame oil
  • 750 ml water
  • 2 Dried Shiitake mushrooms
  • 1-1/2 tbsp Mirin
  • 2 tbsp Soy sauce
  • 1 tsp Sugar
  • 1/2 tsp Salt
  • 2 packs Instant udon
  • Sping Onions


  • First Marinate the beef :
    Mix the beef with 1-1/2 tbsp soy sauce, 1-1/2 tbsp mirin, 1 tsp sugar, 1 tsp grated ginger. Mix all together and set aside for 20 minutes
  • Mix also the onion with 1 tsp salt and set aside
  • After 20 minutes, heat the pan with sesame oil and add the onion mixture. Saute until the onion fragrance comes out, then add the beef mixture, saute until the beef become brown.
    Then you add water into the pan and add Shiitake mushrooms after the water. Let it cook first, then you take out the bubbles that come out on the water.
    Cook until the beef is cooked, then you add 1-1/2 tbsp mirin, 2 tbsp soy sauce, 1 tsp sugar, 1/2 tsp salt. Mix all the ingredients and adjust the taste according to your taste.
    Take out the Shiitake mushrooms and add the Udon into the soup. Let it cook until the udon become soft and eatable.
    After the udon is cooked, transfer the udon and soup into the bowl and garnished with spring onions.
