APPLE YOGURT CAKE

This delicious Apple Yogurt Cake makes the perfect any time dessert of the day. It’s great with a warm cup of coffee and tea. Soft, fluffy and delicious Apple Yogurt Cake that will not make you regret to eat, and I bet you will make more and more.

This cake is really easy to make and the result will make you satisfied. Apple is easy to find everywhere and healthy also for your health. I always love to make a cake with fruits, and added almond slices on this cake, give a special taste.

WHAT YOU NEED FOR THIS CAKE :

For the cake :

Flour : I use cake flour, you can use all purpose flour for this cake.

Sugar : I use caster sugar, you can use granulated sugar.

Oil : I use Canola oil, you can use vegetable oil. Canola oil is the best choice for baking most cakes because it won’t affect the flavor of the cake at all.

Baking powder : it will help the cake rise in the oven.

Baking soda : baking soda becomes activated when it’s combined with both an acidic ingredients and a liquid. Upon activation, carbon dioxide is produced, which allows baked goods to rise and become light and fluffy.

Egg : to binder and hold ingredients together and giving the cake structure, give a rich flavor.

Salt : to enhance the flavor of the other ingredients.

Yogurt : I use Greek plain yogurt

Almond flour : You can use ground almond for this cake.

Vanilla extract : It enhances the flavor in cake

For the topping :

Apple : I use Red Washington apple, you can use another apple that you can find in supermarket.

Palm sugar : You can use brown sugar for the topping

Almond slices : Will give a special taste for this cake

HOW TO MAKE APPLE YOGURT CAKE :

For the dry ingredients : In a medium bowl, mix together cake flour, almond flour, baking soda, baking powder and salt with the whisk and set aside.

For the wet ingredients : In another bowl, mix eggs with sugar with hand or standing mixer until light and fluffy.

Add Canola oil and mix until incorporated.

Add in the yogurt and mixer again until incorporated.

Add in vanilla extract and mix until incorporated.

Slowly add the flour mixture into the wet ingredient and mix with spatula until incorporated.

Pour the batter into the prepared 18 cm or 7 inch spring form, set aside and prepare for the topping.

 

For the topping : cut the apple into thin slices and arrange on the top of the batter.

Sprinkle with palm sugar and almond slices.

Preheat oven 180 degrees C or 350 degrees F and bake the cake for 40-50 minutes

Ingredients
  

  • 165 grams (1 1/4 cups) Cake flour
  • 30 gram (1/4 cup) Almond flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 2 Eggs room temperature
  • 120 ml (1/2 cup) Canola oil
  • 180 grams (3/4 cup) Greek plain yogurt room temperature
  • 1 tsp Vanilla extract
  • 150 grams (3/4 cup) Caster Sugar
  • 1 Apple For topping
  • 1/2 tsp Palm sugar For topping
  • 30 gram (1/4 cup) Almond slices

Instructions
 

  • Preheat oven 180 degrees C or 350 degrees F, line your baking pan with baking paper
  • For the dry ingredients : In a medium bowl, mix together cake flour, almond flour, baking soda, baking powder and salt with the whisk and set aside.
  • For the wet ingredients : In another bowl, mix eggs with sugar with hand or standing mixer until light and fluffy.
  • Add Canola oil and mix until incorporated.
  • Add in the yogurt and mixer again until incorporated.
  • Add in vanilla extract and mix until incorporated.
  • Slowly add the flour mixture into the wet ingredient and mix with spatula until incorporated.
  • Pour the batter into the prepared 18 cm or 7 inch spring form, set aside and prepare for the topping.
  • For the topping : cut the apple into thin slices and arrange on the top of the batter.
  • Sprinkle with palm sugar and almond slices and bake for 40-50 minutes (depends on your oven). Check using toothpick inserted in the middle of the cake, if comes out clean means your cake already done.
  • Let cool the cake on the cooling rack and after the cake is completely cool, slice the cake and enjoy!
